The professorship’s research focuses on advancing enology amid climatic, technological and societal changes. In this context, wine quality and authenticity are in the center of attention. We use state-of-the-art analytical methods and sensory evaluation to develop and assess innovative and sustainable enological and technological methods. As part of our research, we study, for example, the relationship among winemaking practices, ingredients, aroma development and sensory quality. Digitalization, AI and automation are becoming increasingly important to control winemaking processes with greater precision, use resources more efficiently and improve wine quality. Our mission is to translate scientific findings into practical solutions for the industry while safeguarding the authenticity and quality of wines.
