Professorship for Food Safety

The professorship's research focuses on projects that aim to ensure food safety with the help of analytics, technology, quality and food law. We are currently doing research on allergens, food microbiology, mycotoxins, bioanalytics. One of our projects aims at improving methods for detecting allergens in food, especially hazelnuts and almonds. Processed foods are examined with the help of bioanalytical methods.
