Professorship for Enology

The Professorship for Enology focuses on the adaptation of wine technology to new, changing situations within winemaking.  Climate change, in particular, with its effects on the components and health of the grapes, plays a key role here.  At the same time, technological progress and changes in wine law must also be taken into consideration.  In an increasingly global wine market with growing international competition it is essential to respond more effectively to the needs of the consumer on questions of quality, taste, price, as well as consumer protection.  In order to achieve this we are developing new technologies and testing their suitability for the sector, without endangering the tradition and authenticity of the wines.  Here it is important to maintain and cultivate international contacts with other research institutions and to be actively involved in international bodies.  The intergovernmental International Organisation of Vine and Wine (OIV), currently chaired by Ms. Christmann, plays a highly significant role here.
