The Center of Analytical Chemistry & Microbiology consists of the Departments of Wine Chemistry & Beverage Research, Microbiology & Biochemistry and the working group Chemistry & Sensory Evaluation of Plant-Derived Foods.

Department of Wine Chemistry & Beverage Research

Research activities of the Department of Wine Chemistry & Beverage Research are the physical-chemical characterization of alcohol-free and alcoholic beverages combined with the corresponding development of analytical methods. Main subjects are product quality, technological impact of beverage substances, and molecular nutrition. The in-house fruit juice company is mainly concerned with research issues in the field of beverage technology.

Department of Microbiology & Biochemistry

The Department of Microbiology & Biochemistry is engaged in the impact of microorganisms during wine and beverage production. Main issues are biodiversity of fermentation microorganisms and their impact on product quality, analysis of microorganism-derived aroma substances, selection of microorganisms and their interaction during fermentation processes as well as fermentation control.

Professors and research scientists of both departments teach in the degree programs Beverage Technology and Viticulture & Enology (B.Sc., M.Sc.).

Working group Chemistry & Sensory Evaluation of Plant-derived Foods

The working group Chemistry & Sensory Evaluation of Plant-derived Foods is responsible for a substantial part of the teaching in various degree programs. Study courses are basic chemistry, wine and beverage chemistry, science of raw materials, brewery technology, coffee, food safety and quality management. Research issues are in the fields of chemical analysis and sensory evaluation of plant raw materials as well as fruit and vegetable juices, coffee, brewery, food safety and quality management.
